My co-host for The Table Rock Podcast Julie and I were lucky enough to snack with my friend McKenzie from Sprouting Vitality. We talked of dream journals over a simple yet perfectly decadent cookie. For now, we figured we would give you a place to find the recipe.
1 cup of peanut butter (McKenzie used crunchy)
1/3 cup of bourbon maple syrup
1 farm fresh egg
1 tsp vanilla extract
3 tsp Almond Flour
1 tsp Chia Seeds
1/3 – 1/2 Dark Chocolate Chunks
Sprinkle flaked sea salt
Preheat oven to 350 degrees. You’ll need one bowl. She use’s her kitchen aid mixer. Place peanut butter, maple syrup, egg vanilla extract in and whisk together. On low add in the baking soda, almond flour, and chia seeds until combined. Pour in the chocolate chunks and mix evenly into the dough. Using a spoon or a cookie scooper, scoop out balls of dough & place on a parchment-lined sheet pan. Press down on each ball to evenly flatten the cookies, not too much, you want them to have a nice bite. Sprinkle with sea salt and place in the oven for 10 minutes. Remove and enjoy. *You can also refrigerate the cookies overnight
The rich chocolate paired with the peanut butter and sea salt is the perfect combo of salty-sweet. Be sure to let Kenzie know who you like the cookies, we sure did.
